This PR is to update the node versions and to loosen some of the required deps and move them to the peerDependencies.
Node 14 is dead.

Bumped version of node to 16.
16 should be removed soon as it is EoL.
This change is needed as consumers of this package may have different versions of the packages now, allowing for rolling updates to consumers.
